Each spring the Big Leaf maple trees produce huge, orchid-like blossoms that, if given the right weather, can induce the bee to go wild with honey production. It's what we hope for, a warm and dry-ish spring to allow our beehives to get big and fat before summer hits. This year was a doozy, producing way more than anticipated. Ask any local beek and he or she will likely admit to being exhausted by this amazing spring harvest!
It should also be noted that while this honey is very light in color and very clear, it is one of our strongest in flavor. It's minty and herby and sweet like cotton candy all at once. Perfect for a cheese plate or for drizzling on buttered toast for an exciting kick of flavor! if you've had our Spring Blossom, you'll be somewhat familiar with this floral honey. Both come from the same time of year, with the only exception being that Spring Blossom is produced from bees pollinating blueberry farms. So, this will be like the Spring Blossom, but without the blueberry nectar! We have a very limited quantity and are only selling the maple blossom here and in our Pike Place market shop.
